Vanilla Buttermilk Cake with Brown Sugar Icing

  • 1 c butter, room temperature
  • 2 1/3 c sugar
  • 1 ½ t vanilla extract
  • 3 large eggs
  • 3 c flour
  • 1 t baking powder
  • ½  t baking soda
  • 1 c buttermilk

 

Grease and flour bundt pan. Preheat oven to 350 degrees.  Place flour, baking powder and baking soda in a bowl, mix and put aside.

In another bowl, cream butter and sugar until fluffy.  Add vanilla extract and eggs on at a time.  Add flour mixture and buttermilk, alternately.  Put cake mixture into prepared bundt pan and bake for 40 minutes or until a wooden skewer comes out clean.

Put on baking rack to cool for about half an hour and take out of pan to finish cooling.

Icing

  • ¼ c butter, room temperature
  • ½ c brown sugar, lightly packed
  • 1/3 c heavy whipping cream
  • 1 c confectionary sugar

 Heat butter, brown sugar and heavy cream in a pan on medium heat.  Bring to a boil while stirring.  Take off heat and turn stove off.   Slowly add confectionary sugar, making sure there are no lumps.  Place icing on the cake and let settle uncovered until firm.   Enjoy!
