Chicken, Sausage and Potatoes


This has got to be the easiest recipe to make.   Few ingredients, cooks in the oven and is so good. 

Make the dressing first to allow the flavor to blend.  I have used store bought Italian dressing, in fact, it is delicious.  The 8 oz bottle would work for this recipe.

  • ¾ c canola oil
  • 1/3 c white wine vinegar
  • 1 ½ T sugar
  • 2 cloves garlic, minced
  • ½ t oregano
  • ½ t dried parsley
  • 1 T red bell pepper, minced
  • 1 t salt
  • 1/2 t pepper 

Mix all ingredients together, shake in covered shaker and set aside.

  • 3 lbs chicken thighs
  • 7 large potatoes, cubed (1 ½ “ cubes)
  • 2 lbs. sweet Italian sausage
  • 1 recipe Italian dressing

Preheat the oven to 350 degrees.

In a 15” X 10” baking or roasting pan, place the potatoes, sausage and chicken (skin side down).  Shake the dressing and pour over the potatoes, sausage and chicken.  Salt and Pepper to taste. Bake for forty five minutes, checking occasionally to stir the potatoes or flip the sausages if necessary.

Remove from the oven and stir the potatoes and sausage and flip each piece of chicken so the skin side is up.

Increase the oven to 375 degrees.  When the temperature has reached 375 degrees, add the pan back into the oven and bake for another half an hour.  The potatoes should be roasted and the sausage and chicken browned.
