Chicken and Broccoli

  • 2 boneless, skinless chicken breasts, cut into small pieces
  • 4 T canola oil
  • salt and pepper to taste
  • 2 bunches scallions, sliced
  • 6 T soy sauce
  • 6 T rice vinegar
  • 4 T brown sugar, packed
  • 2 lbs fresh broccoli crowns, separated
  • 2 c cabbage, shredded
  • brown rice

Place oil and chicken in a medium skillet over medium-high heat and season with salt and pepper to taste.  Stirring, continue to cook for four minutes.

While the chicken is cooking, in a small bowl, place the scallions, soy sauce, vinegar, and brown sugar, stirring until sugar dissolves.

Stir in the broccoli and cabbage to the chicken in the skillet and cook for five minutes, stirring often.  Stir in the soy sauce mixture and cook for seven minutes until the broccoli is tender.

While the broccoli and cabbage cook, make the rice according to package directions.

Serve chicken and broccoli mixture over brown rice.  I like to serve with a drizzle of condensed balsamic vinegar and sesame seeds.
