Anise Biscotti

Line two baking sheets with parchment paper and set aside.

  • 5 c flour
  • 4 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 2 sticks butter, room temperature
  • 4 eggs
  • 1 1/2 c sugar
  • 2 t anise extract

Place flour, baking powder, baking soda and salt in a medium bowl.  Set aside.

Preheat oven to 350 degrees.

Place beat butter and sugar and beat.  Add eggs one at a time and extract.  Add flour mixture and beat on low until blended. Divide mixture into four equal parts.  Form each part into a log measuring around 2 1/2 inches by nine inches long.

Place logs on a parchment lined baking sheet. Bake for twenty five minutes or until golden brown on the bottom. Remove from the oven and let them cool down on a rack.

Carefully cut them a half inch thick, turn each piece on their side and bake on each side for 12 minutes or until lightly golden.
