Have a platter of these beauties on your counter when the family comes home and there are sure to be smiles on their faces.

  • 8 small boneless skinless chicken thighs

  • 1 egg

  • 1/2 cup buttermilk

  • 1 cup flour

  • 1 tbsp salt

  • 2 tsp black pepper

  • 6 cups canola oil

  • 1/2 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp chili powder

  • 2 tsp honey

  • 8 slider buns

Place wax paper on a baking sheet and set aside.

Place a piece of foil on a baking sheet and place a wire rack on top and set aside.

Place egg and buttermilk in a bowl and mix well.  In another bowl, place the flour, salt & black pepper.

Pat chicken dry with a paper towel, put on a plate and set aside.

Place oil in a cast-iron or electric skillet and heat until it reaches 325 degrees.  Meanwhile, place chicken in flour mixture, then egg mixture and then back into the flour and place on prepared baking sheet. Repeat until all pieces are coated.

Place four pieces in the skillet at a time, not overcrowding them. Cook for six minutes per side.   Place them on the prepared baking sheet with foil to cool.   Allow the oil to return to temperature before adding the next batch.

In another bowl, combine, chili powder, garlic, paprika, and honey along with 1/2 cup of the frying oil. Stir well, then brush over the fried chicken pieces.   Serve on slider buns.
