Zucchini Pie

This is not the usual egg and zucchini pie.  This is an old fashioned zucchini pie from our childhood.  Very similar to Grammy’s scalloped potatoes.

  • 4 T butter
  • 1 medium onion, chopped
  • 4 large zucchini, sliced
  • 4 eggs
  • ½ c milk
  • 1 T flour
  • salt and pepper to taste
  • ½ c cheddar cheese, shredded
  • ½ c parmesan cheese

Butter a nine inch pie plate and set aside.

Preheat oven to 350 degrees.

Place butter and onion in a skillet and cook for three minutes over medium heat.

Place zucchini in a large bowl and set aside.  Place the eggs, milk, flour salt and pepper in another bowl and whisk together to combine and set aside.

Add onions to zucchini and mix.   Then stir in cheeses to the zucchini mixture. Add egg and milk mixture to the zucchini and stir until well combined.  Pour zucchini filling into prepared pie dish and bake for about 50-55 minutes or until center comes out clean.
