Seared Sea Bass

 


  • 1 lb sea bass filets (2 ½ inches thick) 
  • olive oil 
  • salt and pepper to taste

Preheat oven to 450 degrees.

Pat the fish dry and season with salt and pepper both sides.

Place an oven proof pan on the stove and add enough olive oil just to sear the sea bass.  Heat to medium high.   Sear for five minutes until golden brown. Flip over for three more minutes.  Remove from heat and turn off stove.  Place the pan in the oven for four minutes.

Remove from oven and enjoy.

Serving suggestion:  Serve over a couscous and vegetable mixture.
