Arugula and Pear Bruschetta

A nice, light and refreshing bruschetta with a glass of wine is perfect beginning of an evening with friends!
  • 2 T balsamic vinegar
  • 3 T olive oil
  • salt and pepper to taste
  • 2 bosc pears 
  • 1 T lemon juice
  • 2 T pine nuts, toasted
  • 3 c arugula
  • pecorino cheese, shaving
Place the balsamic vinegar, olive oil and salt and pepper in a bowl and whisk together.
 
Peel and core pears, thinly slice them and sprinkle them with lemon juice.
 
Place the arugula in a bowl and mix with the dressing.
 
Place the dressed arugula on toasted bruschetta.
 
Arrange the pear on top of arugula and sprinkle with the toasted pine nuts.
 
Place the pecorino shavings on top and serve
