Festive Veggie Pizza


Perfect for New Year's Day snack.
  • ¾ c parmesan cheese
  • 1 ½ t dried thyme
  • 1 lb. pizza dough
  • 1 T olive oil
  • 2 c mozzarella cheese, shredded
  • ½ t salt
  • ½ c tomatoes, diced
  • ½ c orange bell pepper, diced
  • ½ c yellow bell pepper, diced
  • ½ c green bell pepper, diced
  • ½ c red onion, chopped
 Preheat oven to 425 degrees.
 
Place parmesan and thyme in a small bowl, whisk and set aside.
 
Roll out pizza dough on lightly floured board, shaping into a circle and place pizza onto large baking pan sprayed with cooking spray.    Brush dough with one tablespoon of the olive oil.   Sprinkle half of the parmesan mixture over dough, sprinkle with shredded mozzarella, leaving a 1-inch border for the crust.

Place tomatoes and a half teaspoon of the olive oil and a pinch of the salt in small bowl.   Place tomatoes along crust, working down long side of the pizza to resemble the red stripe of a rainbow. Repeat with remaining veggies, olive oil and salt, creating stripes for each color in the following order: orange peppers, yellow peppers, green peppers and finishing with red onion. Sprinkle with remaining quarter cup parmesan mixture.

Bake twenty-five minutes or until cheese is melted and crust is lightly browned.   Cool at least five minutes before slicing and serving.
