Lemon Garlic Chicken Thighs

 


Perfect for a weeknight dinner.  Serve over rice or egg noodles and enjoy!

  • 6 chicken thighs, skinless, boneless
  • 5 T butter
  • 4 garlic cloves, minced
  • 1 t paprika
  • 1 t onion powder
  • salt and pepper to taste
  • juice of 1/2 lemon
  • ½ c chicken broth
  • 1/2 cup fresh chopped parsley

Place onion powder, paprika, salt, and pepper in a bowl and mix.  Season chicken thighs with the spice mixture.

Place the butter in a large skillet over medium-low heat and place the chicken thighs in skillet. Cook for six minutes then flip and cook another six minutes.  Remove chicken to a plate and set aside.

In the same skillet, add lemon juice and broth and reduce the sauce for a couple of minutes, until slightly thickened.

Place the chicken thighs back to the pan and reheat quickly. Sprinkle with fresh parsley and enjoy!
