Spinach and Mozzarella Quiche


Perfect for a quick mix and bake dinner, quiche is a great way to get dinner on the table on a busy night.
  • 1 10" pie dough
  • 2 T olive oil
  • 1 onion, sliced
  • 3 c fresh spinach, torn
  • salt and pepper
  • 5 large eggs
  • ¾ c milk
  • ¾ c mozzarella, shredded
Preheat oven to 375 degrees.
 
Roll out pie dough, place in a ten inch pie dish and set aside.
 
Place the oil and onion in a skilled and cook over medium heat for four minutes.   Stir in the spinach and cook for another five minutes.   Remove from heat, add salt and pepper and set aside.
 
Place eggs, milk and cheese in a medium bowl and whisk together.  Season with salt and pepper.
 
Place the spinach mixture over the dough and pour the egg mixture over spinach mixture.   
 
Bake for forty-five minutes or until middle is set.
