Chicken Stroganoff


Comforting and easy, chicken stroganoff is a no brainer for a busy night.
  • 1 T carrots, diced
  • 1 T parsley, chopped
  • 1 T onion, diced
  • 1 clove garlic
  • salt and pepper to taste
  • 4 chicken breasts, cooked and cubed
  • 1/2 c water
  • 2 T butter
  • 4 ozs cream cheese
  • 8 oz cream of chicken soup
  • 1 c peas, frozen
 
Place the carrot, parsley, onion, garlic, salt, and pepper in a food processor and process slightly and place in a slow cooker. Add chicken, water and butter and mix.  Set to low for four hours.
 
Stir in cream cheese, soup and peas.  Turn up to high for half an hour.
Turn off crock pot and serve.   Serve over rice or noodles – Yum!
