Baked Cauliflower

Looking for something different?  Tired of the same old meals?  Try introducing this flavorful side dish.    Broccoli is a great substitute too. 

  • 1 head of cauliflower, chopped
  • 3 medium tomatoes
  • 1 T butter
  • 1 T flour
  • 1/2 c parmesan cheese
  • 2 c milk
  • 1 c breadcrumbs
  • salt and pepper to taste

Steam cauliflower over a double boiler until tender and cool.   Preheat oven to 425 degrees. In a medium sauce pan over medium heat, melt butter and stir in flour until combined and golden.  Slowly add milk and increase heat to high and whisk until boiling.  Lower heat and stir until it thickens. Add 1/4  parmesan cheese, salt and pepper. 

Slice tomatoes and place on the bottom of a buttered 13" X 9" baking dish. Place cauliflower on tomatoes. Pour parmesan cheese mixture over cauliflower and sprinkle with breadcrumbs.  Bake for ten minutes.  Remove from oven and sprinkle with remaining 1/4 cup parmesan cheese and serve.
