Cheese Biscotti


I am always looking for new food combinations and interesting ways make the traditional dishes.   We have served frizelles, taralli and crecia with a nice glass of red wine.  Looking for something different, the thought of a cheese biscotti came to mind.  Try these the next time you enjoy glass of cabernet.

  • 2 sticks of butter
  • 3 large eggs
  • 1 c parmesan cheese
  • 2 c flour
  • 2 t baking powder
  • 1 t salt
  • 1 T butchers pepper

Prepare two baking sheets with parchment paper and set aside. 

In a large bowl, beat the butter until it's fluffy. Add the eggs until incorporated.  Add the cheese and mix. Set aside.

In a medium bowl, whisk together flour, baking powder, salt and pepper.  Add this to the wet mixture and mix well. 

Preheat oven to 350 degrees.

On prepared baking sheets, shape dough into two 12 inch logs by 1 1/2 inch wide.  Bake for 30 minutes.

Cool for ten minutes.  Slice 1/2 inch slices and put back in the oven.  After 15 minutes, remove from the oven, flip and cook for another 15 minutes.  They should be light brown.  Remove from oven and cool.
