Applesauce Cake with Caramel Sauce

Make your friends and family feel special with their own mini cake.   The caramel sauce adds a nice touch and makes a great presentation with seasonal sprinkles.

  • 1/3 c butter, room temperature
  • 1 1/3 c sugar
  • 2 eggs
  • 1 c applesauce
  • 1/3 c water
  • 1 2/3 c flour
  • 1 t baking soda
  • ¼ t baking powder  
  • ¾ t salt
  • ½ t cinnamon
  • ½ t ground cloves
  • ½ t ground ginger

Grease and flour mini bundt pans.  Set aside. 

Preheat oven to 350 degrees.

In a large bowl, beat butter and sugar together.  Add eggs one at a time, mixing well.  Add applesauce and water and mix.  Set aside.

In a medium bowl, mix flour, baking soda, baking powder, salt, cinnamon, ground cloves and ground ginger.  Add these dry ingredients to the wet ingredients and beat with a mixer.

Pour cake mix into six min bundt pans and bake for 25 minutes or until wooden toothpick comes out clean.  Cool on rack for 15 minutes and invert to a cool rack.  Cool completely.

Caramel Sauce

  • 1 c brown sugar, packed
  • ½ c whipping cream
  • ¼ c corn syrup
  • 1 T butter

Place all ingredients in a medium sauce pan.  Bring to a boil over medium high heat stirring constantly.  Reduce heat and simmer (uncovered) for about five minutes.

Cool slightly and drizzle over mini cakes.
