Bacon, Cabbage and Egg Noodles

So simple, yet so good.  This recipe has been made by many generations in our family.  Needing to stretch their money, bacon, cabbage and noodles was a sustainable and affordable dish to feed the family.  It's funny how some of the tastiest recipes were considered peasant food. 

  • 1 lb bacon
  • 1 small head of cabbage, cored and cut into small pieces
  • 1 lb. egg noodles
  • Salt and pepper to taste

In a large skillet over medium heat, cook the bacon, retaining the drippings.  When cooked, remove the bacon and set aside.  When cool, break into small pieces.

Place the chopped cabbage into the skillet and cook over medium heat until it just begins to brown.

Preheat oven to 350°.   Cook egg noodles and drain.  Toss noodles into the skillet with the bacon and cabbage.  Place in a baking dish and bake for fifteen minutes.  Serve hot.
