Couscous and Vegetables

Did you know that an electric skillet has a "boil" setting?  Mine does.  Once unable to cook in my kitchen, we had to resort to using the grill, my roaster oven, electric skillet and slow cooker.   That's when the boil setting was discovered.  I actually made this dish that way.  It came out great!

  • 4 T oil
  • 1 small zucchini, chopped
  • 1 small yellow squash, chopped
  • 1 medium onion, diced
  • 1 medium tomato, chopped
  • 2 cloves garlic, minced
  • Israel couscous

Make couscous according to package directions and set aside.

Place oil and vegetables in skillet and cook for ten minutes over medium heat.

Mix with couscous and serve.
