Sausage, Peppers and Onions



Sausage, peppers and onions is one of those meals that sometimes one just craves!   Last night was one of those times.  So simply, yet so good.

  • 2 lbs. sweet Italian sausage
  • 8 green or tri-colored peppers
  • 1 or 2 large yellow onions
  • salt and pepper to taste
  • Olive oil

Preheat oven to 350°. " In a 13" X 9" baking pan, place the sausage cut in 4" lengths, the peppers and the onions.  Drizzle with olive oil. Add salt and pepper to taste.  Bake for 45 minutes, remove from the oven, stir vegetables and turn the sausages (to allow browning on all sides).  Return to oven, watching until sausages are fully cooked.
