Breaded Pork Chops and Mashed Potatoes


 

Growing up, our Mother would cook our favorite meal on our birthday.  My  favorite dinner was breaded pork chops and noodles romanoff.  Craving these scrumptious pork chops, they became dinner, just because.  Not  having the ingredients for noodles romanoff on hand, mashed potatoes were a great substitute. These mashed potatoes were our grandmother's recipe.  One we love!

  • 3 T olive oil
  • 4 one inch thick pork chops
  • 1 c breadcrumbs
  • ½ c parmesan cheese
  • 1 t garlic powder
  • 1 t salt ½ t pepper
  • 1 T parsley flakes
  • ½ c milk

Place the oil in the middle of a baking sheet.  Set aside.

Preheat the oven to 425 degrees.  Place all the ingredients, except for the milk in a shallow, wide bowl.   Mix well.   Place the milk in another shallow bowl (one that will fit one pork chop at a time).

Put one pork chop at a time in the milk and then in the bread crumb mixture.  Place it on the prepared baking sheet and do the same with the second one.  Discard any leftover breadcrumbs.

Bake the pork chops for ten minutes, flip and cook another ten minutes – browning on both sides.  Remove from the oven and cut into the center of one of the pork chops to ensure it is cooked.   They should not be pink at all.  If necessary, return to the oven to cook, but watch carefully and check frequently.

 

Mashed Potatoes

  • 6 medium russet potatoes, peeled and cubed
  • 1 stick of butter
  • 1 c evaporated milk
  • salt and pepper to taste

Place the potatoes in a large pan of water.  The water should cover and be roughly an inch above the potatoes.  Boil until soft.  Drain the potatoes and place in a large bowl.  Cut the butter into chunks and add to the potatoes.  Whip with a mixer.   Add the salt and pepper and a ½ c milk.  Whip again.   Add enough of the remaining milk to desired consistency and serve.
