Roasted Brussel Sprouts with Ricotta and Bacon



Looking for a different approach to preparing brussel sprouts, this one's a keeper. Why not introduce it to your Thanksgiving table?

  • 1 large onion, diced
  • 7 T olive oil
  • salt and pepper
  • 4 c brussel sprouts, bottoms removed and quartered
  • 8 slices bacon, cooked and chopped in pieces
  • 1 c ricotta cheese

 Preheat oven to 425 degrees.  Place onions on a baking sheet and drizzle with 3 T oil. Cook for seven minutes, stirring occasionally.  Remove onions from the oven and add brussel sprouts to the baking sheet and drizzle with remaining oil, salt and pepper.  Gently mix and return to the oven.  Cook for 20 more minutes, stirring occasionally.

Remove from the oven, and reduce heat to 350 degrees.  Transfer the brussel sprout mixture to a bowl.  Mix in the ricotta cheese and bacon and place mixture in a baking dish.

Place the baking dish in the oven just to heat, about ten minutes.  Remove from the oven, turn it off and serve.
