Mahi Mahi


Trying to be more adventurous, I cooked Mahi Mahi for the first time.  Guess what?  To my surprise, I really like it!  Super easy to make.


  • 1 lb Mahi Mahi
  • 2 t olive oil
  • 1 lemon in half
  • ½ t salt
  • a dash of fresh ground pepper
  • 2 cloves garlic, minced

Divide the Mahi Mahi into four 4 oz pieces.  Place the oil in a skillet over medium heat and place the fish on top of the oil.   Squeeze one half of the lemon over the fish.  Sprinkle on the salt, pepper and one clove of minced garlic.  After three minutes, flip the Mahi Mahi and squeeze the other half of lemon over the fish.  Divide, equally, the remaining clove of minced garlic and cook for three minutes.

Remove from heat and place Mahi Mahi on a plate of arugula and serve with diced, fresh tomatoes over the top.  Enjoy!
