Noodles Romanoff

Growing up, on our birthday, we were given the honor of choosing what we were going to have for dinner.   My very favorite birthday dinner was breaded pork chops and noodles romanoff.  It’s no secret our mother didn’t like to cook and the noodles romanoff she served were out of a box.  This is the closest I came to flavor I remember.  Brings back some wonderful childhood memories.

  • 1 lb egg noodles
  • 2 c sour cream
  • 1 1/2 c  milk
  • 1/2 c parmesan cheese, grated
  • 1T fresh parsley, chopped
  • 1 t salt ¼ t pepper
  • 2 garlic cloves, minced
  • 4 T butter

Cook egg noodles according to package directions or make your own.   While the egg noodles are cooking, mix sour cream, milk, ¼ c parmesan cheese, parsley, salt, pepper and garlic together. When ready, drain egg noodles and return to saucepan. Add butter, then sour cream mixture. Mix together quickly.   Serve with remaining ½ c parmesan cheese sprinkled on top.
