Peanut Butter Balls

Peanut butter balls are a Christmas tradition that is a must!    Family members were looking for some at Thanksgiving.  They don't last long around here.

  • 1 ½ c peanut butter
  • 2 T butter, room temperature
  • 3 T light corn syrup
  • 1 t vanilla extract
  • 4 T heavy cream
  • 1 lb confectionary sugar
  • 2 lbs. chocolate candy melts

Mix the first six ingredients together until well incorporated.  Form into  1 inch balls.  Melt chocolate according to package directions.  Roll the peanut butter balls into the chocolate and place on a baking sheet lined with wax paper.   We store ours in the freezer, but the refrigerator will be fine.
