Caesar Salad

Caesar Salad is a great accompaniment to steak or topped with grilled chicken. 

  • 1 T garlic, minced
  • 2 T olive oil
  • 6 garlic cloves, minced
  • 15 anchovies
  • ½ c olive oil
  • 2 eggs
  • 2 heads of romaine lettuce
  • 1 c of freshly grated parmesan cheese
  • 1 c garlic croutons

In a large wood bowl, mix 1 T garlic and 2 T olive oil and rub around the inside of the bowl to season it.

Tear the romaine lettuce to bite size pieces and place in the prepared bowl.   Add the croutons.

Place the remaining oil, remaining garlic, egg and anchovies in a food processor for about one minute.   Add the parmesan cheese and process for one more minute and pour over romaine lettuce in bowl, toss to coat and serve.
