Savory Garlic Knots


 Garlic knots are so good to pick on while waiting for dinner.  Even better with a nice glass of red wine.

  • Pizza Dough (my recipe under roasted garlic pizza in blog)
  • cornmeal
  • 2 T olive oil
  • 1 T garlic powder
  • 2 T parmesan cheese
  • 1 T sea salt
  • 1 stick butter
  • 3 T garlic, minced
  • ½ c Pecorino cheese
  • 3 T fresh parsley, chopped

Dust a baking sheet with cornmeal and set aside.

Allow pizza dough to rise according to recipe and then place on a board sprinkled with flour.  Sprinkle a little flour on top of dough and roll out into a 16 ½” X 13” rectangle.   Brush the dough with oil.  Sprinkle with garlic powder and parmesan cheese.  Cut the dough in half lengthwise.  Then cut both halves across in 1 ½ inch wide strips.  Tie the strip into a loose knot and place on prepared baking sheet.  Leave 2 inches between knots. Sprinkle the knots with sea salt. Cover with plastic wrap rise in a warm, draft-free place for at least half an hour.

After knots rise, preheat oven to 375 degrees.

Bake knots for twenty minutes, watching until they are lightly golden.  Place baked knots in a large bowl. 

In a small pan, place butter and garlic and cook over low heat for roughly four minutes (do not brown).   Remove from heat and pour garlic butter over knots.  Add Pecorino cheese, and parsley. Place on a decorative plate and serve right away.
