Baked Cod


This cod is flaky and tender.  A nice light, easy dinner anytime.

  • 2 T butter
  • ½ sleeve Ritz crackers, crushed into crumbs
  • 2 T butter
  • 1 lb fresh cod loin
  • juice of ½ a lemon
  • ¼ dry white wine
  • 1 T fresh parsley, chopped
  • 1 T fresh chives, chopped

Preheat oven to 400 degrees.


Place 2 T butter in a medium pan and melt over medium heat.  Stir in crackers and remove from heat.


Place the remaining 2 T butter in a 9” X 9” baking dish and place in the oven to melt.  After three minutes, remove the baking dish from the oven.  Place the cod in the melted butter and flip to coat. Bake the cod for ten minutes.


Remove the cod from the oven and pour lemon juice and wine over cod.  Top with cracker crumbs. Place the cod back into the oven for another ten minutes.   Sprinkle with parsley and chives and serve with some fresh lemon wedges.
