Baked Corn Pudding

This is perfect side to prepare when having company as you can make it ahead of time and pop it in the oven while visiting with your company.  Sometimes I sauté some chopped onion and green pepper in butter and mix it in.  Another alternative is to replace cheddar with gruyere cheese and adding cooked crumbled sausage in place of the bacon.  Also, replacing the corn with cooked, shredded potatoes is delicious too.  

  • half of brick of cream cheese, room temperature
  • ½ c milk
  • ¼ c heavy cream
  • 3 T flour
  • 1 t garlic powder
  • 2 lbs. corn
  • 2 ½ c cheddar cheese
  • 1 lb. bacon, cooked and crumbled
  • salt and pepper to taste
  • fresh parsley, chopped

Grease a baking pan with butter and set aside.

Preheat oven to 350 degrees.

In a mixer with paddle attachment, place the cream cheese, milk, cream, flour, paprika and garlic powder and mix until incorporated.  Remove paddle and stir in corn, cheese, and bacon and salt and pepper to taste. Place in prepared baking pan and bake for twenty five minutes.  Remove from oven and sprinkle with parsley and serve
