Garlic Bread

What’s better than nice, hot garlic bread along the side a dish of macaroni?

  • 1 head garlic, peeled
  • 1 stick butter
  • 1 c parmesan cheese, fresh grated 
  • 2 c mozzarella, shredded 
  • 2 t fresh parsley, chopped
  • 1 t salt
  • 1 loaf of fresh Italian bread, cut in half lengthwise, then crosswise

Line a baking sheet with foil and set aside.

In a small pan, place the garlic and butter and cook over medium-low heat until golden brown (about fifteen minutes).  Place in a medium bowl and rest for five minutes.  Stir in parmesan and parsley and smash to a paste with a wooden spoon.  Finally, stir in mozzarella and salt.

Preheat oven to 375 degrees.

Place bread on prepared baking sheet.  Spread with garlic mixture and place in preheated oven for about ten minutes until golden brown.  Watch carefully as bread burns unattended.  Let cool slightly, then slice and serve.
