Strawberry Shortcake Squares

We served this dessert at a dinner after the fireworks in our Town one year.  It was devoured!

  • 1 pound cake
  • 2 3oz vanilla pudding
  • 2 3oz strawberry gelatin
  • 1 ½ lbs strawberries, stems removed and cut in half
  • 8oz whipped cream
  • 1 ½ lbs strawberries, stems removed and cut in half for top

Cut pound cake into slices and place in the bottom of a 15” X 10” baking pan.  Place prepared strawberries on top of pound cake and set aside.

Make gelatin and refrigerate until just beginning to set.

Make the pudding and cool.

Place the gelatin over the strawberries and refrigerate.  Once gelatin has set, carefully spread the pudding over the gelatin.  Gently spread the whipped cream over the pudding and refrigerate until ready to serve.
