Baked Eggplant and Burrata


We like to serve this as an appetizer in individual dishes baked for each person.

  • Olive oil
  • 3 balls burrata
  • 1 medium eggplant, cut and fried
  • 4 c marinara sauce
  • shredded basil leaves

Heat oven to 375 degrees.

Grease a couple small oval baking dishes with olive oil.   Place marinara on the bottom and top with slices of cooked eggplant.  Then gently place some burrata, marinara, basil and repeat two more times -  topping with burrata.   Place dishes on a baking sheet for easy in and out of oven.

Bake for about 15 minutes just until warmed and burrata has gently melted.  Let it rest a few minutes before serving.
