Egg Taralli


We cherish the many memories baking with family.  These taralli are one of those treats made enjoying a glass of wine and many laughs.

  • 4 2/3 c flour
  • ½ t baking powder
  • 6 large eggs
  • ¼ c canola oil
  • ¼ c dry white wine

Place a couple of kitchen towels on counter.

Place two cooling racks, on two baking sheets lined with foil and set aside.

Place another two cooling racks on two baking pans and set aside.

Place the flour and baking powder in a medium bowl and set aside. 

Place the eggs, oil and wine in a large bowl and beat to incorporate.  Slowly add the flour mixture.  Knead the dough until smooth.

Cut off a piece of dough and roll it into a rope about ½“ thick.  Cut in eight inch pieces.  Make a circle and pinch ends.  Place the rings on the towels to rest for 15.

Fill a large stock pot with water and bring to a boil.

Place five rings in the boiling water at time, stirring with a wooden spoon so they don’t stick to the bottom.

When they rise to the top, remove them out with a slotted spoon and place back on the towel. Continue with the remaining rings.

Preheat the oven to 475 degrees.

With a serrated knife, make an incision three-fourths of the way through all around the rings, all the way around.

Place five rings on each of the prepared baking pans on the cooling racks, leaving space between them.

Bake for seven minutes and then lower the temperature to 400 degrees and bake for ten more minutes. Be sure to turn the rings with tongs halfway through. Cool on a separate wire rack.

 

For the coating     

  • 2 c granulated sugar
  • ¾  c water

Place the water and sugar in a medium pan over medium-high heat and bring to a boil, stirring constantly with a wooden spoon.   Allow to boil for five minutes and remove from heat.

Place half cup of the sugar mixture and five rings in a large mixing bowl.  Toss the rings to coat them.  Quickly place them on the foil-lined baking pans with wire racks as the sugar will begin to dry. Repeat with the remaining rings.    If the sugar in the pan gets hard, add a little water and heat over medium heat to soften.   Sprinkle with colored sprinkles and dry for half an hour.
