Potato Salad with Bacon and Cheese

Our usual potato salad consists of just cooked potatoes, chopped celery, mayonnaise, salt and pepper.  Sometimes it is nice to indulge.  Potato salad with bacon and cheese is one such indulgence.

  • 7 large potatoes, peeled and cubed
  • 1 c sour cream
  • ½ c mayonnaise
  • 1 lb bacon, cooked and crumbled
  • 1 shallot, chopped 
  • ¼ c scallions chopped
  • 1 ½ c monterey  jack cheese
  • salt and pepper to taste

Place the potatoes In a large pot and cover with water.   Bring to a boil and cook until just beginning to soften.  Drain and place in a large bowl to cool.  Once completely cooled, stir in the sour cream, mayonnaise, bacon, shallot,  scallions, cheese, salt and pepper.

Serve or refrigerate until ready to serve.
