Apple Cake with Crumb Topping

 


Apple cake with crumb topping is good year-round and beckons everyone into the kitchen with a enticing cinnamon aroma.   Top with a scoop of vanilla ice cream and let it melt on top of the cake for an amazing dessert!

  • 1/2 c butter, room temperature 
  • 1 c sugar 
  • 1 large egg 
  • 1 t vanilla extract 
  • 2 c flour 
  • 2 t baking powder 
  • ½ t salt  
  • 1 c milk 
  • 21 oz apple pie filling

Crumb Topping 

  • ¾ c brown sugar 
  • ½ c flour 
  • 3 T butter 
  • 2 t cinnamon 
  • ½ c walnuts

Preheat oven to 350 degrees.

Grease and flour a 13” X 9” baking pan and set aside.

Place butter in a large bowl and beat until creamy.  Slowly add sugar.   Add egg and vanilla, beating until incorporated.

In another bowl, whisk together the flour, baking powder and salt.  Then add dry mixture to butter mixture alternately with milk, beginning and ending with flour mix.  Pour batter into prepared pan and top with apple pie filling. 

Mix together the crumb topping ingredients and sprinkle crumb mixture over apple filling.

Bake for 50 to 60 minutes or possibly until golden.
