Cod in Batter


Cod in batter is a perfect end of the week dinner with french fries and home made coleslaw.

  • 1 ½ c flour 
  • 2 ½ t baking powder 
  • ¾ t salt 
  • pinch of sugar 
  • 1 ¼ c water 
  • 2 t vinegar 
  • 4 sole, cod or haddock fish filets 
  • canola oil for frying

Place some paper towel on a plate and set aside.

In a medium bowl, whisk together the flour, baking powder, salt and sugar. Stir in the water and set aside.

Place enough oil in a deep skillet over medium high heat at least three inches deep.    As soon as the oil is heated, add the vinegar to the batter mixture and stir well. Dip the fish filets in the batter and place right into the hot oil until golden brown.  Drain on the prepared plate and serve hot.
