Cucumber Dip



Cucumber Dip is refreshing and perfect along side fresh raw vegetables to enjoy out on the deck on a late Spring or Summer day.

  • 8 oz cream cheese, room temperature
  • 8 oz cucumber, peeled, seeds removed and chopped
  • 2 T fresh dill, chopped 
  • 2 scallions, chopped
  • 2 T lemon juice
  • 2 T mayonnaise
  • salt and pepper.

Place cream cheese, cucumber, dill, scallions, lemon juice, and mayonnaise in a food processor and process until combined.   Season with salt and pepper to taste.   Serve with carrot sticks, celery sticks, bell pepper, radishes, crostini.
