Grilled Calamari

 


Start off your Memorial Day picnic with grilled calamari and a nice cold glass of prosecco.  Your guests will be delighted and the grill will be all warmed up for the rest of the cookout.  

  • ¼ c olive oil 
  • ½ c lemon juice 
  • 2 T garlic, minced 
  • 2 T parsley, chopped 
  • 1 t fresh oregano, chopped 
  • 1 t salt 
  • ½ t pepper 
  • 2 lbs. calamari rings and tentacles

In a small bowl, mix together the olive oil, lemon juice, garlic, parsley oregano and salt and pepper.  

Place the calamari in a zip lock bag and pour the marinade mix over it and refrigerate for two hours.

 Remove the marinated calamari from the refrigerator and place it into a grill basket that has been spritzed with olive oil.  Toss the calamari around until slightly charred - about five minutes with the grill on high.
