Sweet Potato Cake

Incredibly delicious, a sweet potato cake is perfect anytime.  You don't need an occasion to enjoy one.  What a wonderful way to say, "good morning" to your family on a Saturday morning.

  • 1 c butter, room temperature
  • 2 c sugar
  • 4 eggs
  • 2 ½ c sweet potatoes, cooked mashed
  • 3 c flour
  • 2 t baking powder
  • 1 t baking soda
  • 1 t ground cinnamon
  • ½ t ground nutmeg
  • ¼ t salt
  • 1 t vanilla extract
  • ½ c flaked coconut
  • ½ c pecans, chopped

Grease and flour a 10 inch tube pan and set aside. 

Preheat oven to 350 degrees.

In a large bowl, cream butter and sugar together.   Add eggs one at a time then add sweet potatoes and beat until combined.

In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg and salt.  Slowly add dry mixture to sweet potato mixture.   Batter will be firm.  Stir in vanilla, coconut, and pecans.

Spoon batter into prepared tube pan.   Bake for one hour and fifteen minutes or until a wooden skewer comes out clean.    Cool in the pan for fifteen minutes.   Remove from pan and cool on wire rack.
