Angel Hair with Pancetta, Onions and Mushrooms
Angel hair is a favorite in our family. Served with some pecorino cheese and fresh parsley sprinkled on top and it is truly a mouth watering dinner!
- 4 ozs. mushrooms
- 4 ozs. pancetta, diced
- 2 T olive oil
- 1 onion, chopped
- 1 T garlic, minced
- 1 lb angel hair
Line a
plate with paper towel and set aside.
Place the
pancetta in a medium skillet and cook over medium heat until slightly crispy. With a slotted spoon, remove the pancetta to
prepared plate to drain, leaving the grease in the skillet.
Cook
angel hair according to package directions.
While the
angel hair is cooking, to the skillet, add the olive oil, onion, garlic and
cook for four minutes over medium heat. When the pasta was done I drained it,
add it to the skillet with the vegetables, along with the pancetta and mix
together.
I like to serve it with some homemade pizza dough bread sticks to soak up any juices.
