Antipasto Skewers


Antipasto skewers are a delicious appetizer anytime and the choices for the skewers are endless. 

  • cheese tortellini, cooked 
  • salt and pepper to taste 
  • 2 T balsamic vinegar 
  •  ½ c olive oil 
  • mozzarella balls 
  • 1 t fresh thyme 
  • 1 t fresh oregano, chopped 
  • 1/4 lb. salami, sliced 
  • roasted red peppers, in bite-sized pieces 
  • fresh basil 
  • 14 oz artichoke hearts, drained and in bite-sized pieces 
  • olives

Place cooked tortellini in a bowl and season with salt and pepper.  Stir in balsamic vinegar and ¼ c olive oil and mix to combine.    Set aside.

In another bowl, place the mozzarella balls, thyme, oregano and remaining 1/4 cup olive oil. Mix to combine and set aside.

Assemble skewers by placing one mozzarella ball  salami, roasted red pepper, tortellini, basil, artichoke heart, and olives.
