Antipasto Skewers
Antipasto skewers are a delicious appetizer anytime and the choices for the skewers are endless.
- cheese tortellini, cooked
- salt and pepper to taste
- 2 T balsamic vinegar
- ½ c olive oil
- mozzarella balls
- 1 t fresh thyme
- 1 t fresh oregano, chopped
- 1/4 lb. salami, sliced
- roasted red peppers, in bite-sized pieces
- fresh basil
- 14 oz artichoke hearts, drained and in bite-sized pieces
- olives
Place cooked tortellini in a bowl and season with salt and
pepper. Stir in balsamic vinegar and ¼ c
olive oil and mix to combine. Set
aside.
In another bowl, place the mozzarella balls, thyme, oregano
and remaining 1/4 cup olive oil. Mix to combine and set aside.
Assemble skewers by placing one mozzarella ball salami, roasted red pepper, tortellini, basil, artichoke heart, and olives.
