Chicken Fajitas

 


Chicken fajitas are a pretty healthy dinner.  

  • 4 T canola oil 
  • 1 red onion, sliced
  • 1 each red, yellow and orange bell pepper, sliced 
  • 3 garlic cloves, peeled and smashed 
  • 4 chicken cutlets, sliced 
  • 1 T chili powder 
  • ¼ t garlic powder 
  • ¼ t onion powder 
  • ¼ t crushed red pepper flakes 
  • ¼ t oregano 
  • ½ t paprika 
  • 1 ½ t cumin 
  • salt and pepper to taste
  • 3 T parsley, chopped 
  • 1 lime, halved 
  • tortillas

Preheat the oven to 400°F.

Place the oil in a large oven-proof skillet, add the onion, peppers, garlic and chicken.  Sprinkle the seasonings, on top and mix to combine.

Place the oven proof skillet in the oven and roast, stirring occasionally, for half an hour.

Remove the skillet from the oven and mix in the parsley and the juice of the lime.

Place the mixture onto tortillas and serve with salsa, guacamole and sour cream.
