Grilled Marinated Pork Tenderloin with Blueberry Relish

 

Blueberry Relish is an excellent accompaniment to grilled pork tenderloin, chicken and even grilled swordfish!

  • 2 ½ c frozen blueberries 
  • 1 T chopped fresh rosemary 
  • 1 T balsamic vinegar 
  • ¼ c blueberry preserves

Place the blueberries, 1 T rosemary, vinegar and preserves into a pan.

Bring to a simmer and cook over a medium-low heat for twenty minutes. The mixture will thicken.  Crush the blueberries with the back of a spoon and set aside.

  • 1/2 c teriyaki sauce 
  • 2 T honey 
  • 2 T brown sugar 
  • 2 t ground ginger 
  • 1 T garlic, minced 
  • 3 lbs pork tenderloin

Whisk all ingredients together sugar is dissolved.   Place ingredients in a large zip bag and place the tenderloin in the marinade, seal and refrigerate for at least thirty minutes.  The longer the pork tenderloin marinates, the better the taste.   We prefer to marinate for a couple of hours.

Heat grill to medium high.  Remove the tenderloin from the refrigerator.  Lightly oil grate. Place tenderloin on the grill and cook over for forty-five minutes, browning all all sides, for a single pork tenderloin.  If using a couple smaller loins, cut time in half.  Remove from the grill and let rest for ten minutes covered in foil.   Slice pork, and serve blueberry relish.
