Loaded Nachos

 


What else can I say, but YUM!

  • 1 ½ lbs ground beef 
  • 1 ½ t cumin 
  • ¾ t garlic powder 
  • ¾ t onion powder 
  • ½ t black pepper 
  • 1 ½ t oregano 
  • 2 T butter 
  • 2 T flour 
  • 1 ½ c milk 
  • 3 c cheddar cheese, shredded 
  • 1 bag tortilla chips 
  • 14 ozs black beans drained and rinsed 
  • ¼ c mayonnaise 
  • 1 t sriracha 
  • ½ c parsley or cilantro, chopped
  • guacamole
  • salsa
  • sour cream
  • 1 ripe avocado, diced

Place the beef in a medium skillet and cook over medium heat until browned.  Drain the meat, place in a bowl and add the cumin, garlic powder, onion powder, black pepper, oregano and mix thoroughly. Cover and set aside.

In another pan melt the butter and whisk in the flour for three minutes. Whisk in the milk, slowly, stirring until it thickens.   Add the cheese and whisk until melted. If the sauce seems too thick just whisk in some more milk.

Place the tortilla chips in a casserole dish.   Pour the cheese sauce over the chips.  Place the taco meat on top, followed by the black beans.

Mix the mayonnaise and sriracha together and drizzle over the beans.  Sprinkle on chopped parsley/cilantro.  Add a couple dollops of guacamole, salsa and sour cream.   Add the avocado and serve at once.
