Vegetable and Hummus Wraps

 


 We make hummus from both garbanzo and cannellini beans.  Our hummus recipe is included after the wrap recipe.  These are tasty and good for you.

  • 1 pkg whole grain tortillas 
  • 1 recipe hummus 
  • 2 ripe avocados 
  • 5 oz fresh spinach 
  • 1 medium chopped onion 
  • 2 tomatoes, chopped 
  • garlic, minced 

Place a sheet o wax paper on the counter.   Place a tortilla on the wax paper.   Spread hummus over the tortilla, leaving room on the edges.   Place the avocado in the middle.   Place spinach over avocado.  Sprinkle on onions, then tomatoes and finally some garlic.   Roll everything up like a burrito and insert two toothpicks to hold it together.    Slice the roll, remove the toothpicks and serve.

Hummus 

  • 15 oz cannellini beans, drained 
  • 2 cloves garlic 
  • 2 T lemon juice 
  • 1/3 c olive oil 
  • ¼ c parsley 
  • salt and pepper to taste 

Place the beans, garlic, lemon juice olive oil and parsley in a food processor and pulse to a creamy consistency.  Season with salt and pepper to taste.
