Bacon and Cheese Fritatta

Not that there is often leftover macaroni at our house, but should there be some leftover spaghetti, fritatta is a delicious use of it. 

  • 4 slices bacon, cooked and crumbled 
  • 8 large eggs 
  • 5 slices of american cheese, stacked and cut into cubes 
  • ½ c half and half 
  • salt and pepper to taste 
  • 2 T butter 
  • ½ lb. left over spaghetti

Place bacon, eggs, cheese, half and half and salt and pepper in a bowl and whisk together.   Add cooked spaghetti and mix together.  

Heat medium skillet medium high heat and add the butter.   Pour spaghetti mixture into evenly into pan. Cook until the bottom of the fritatta is brown and set.  Flip onto a dinner plate and place back into the skillet to brown other side.  Remove from skillet and serve.

Alternatives include ham, cooked sausage, pepperoni and leftover vegetables.
