Crispy Peanut Butter Balls

We always make the original creamy peanut butter balls, however, these are a popular addition to our holiday repertoire.

  • ½ c brown sugar 
  • 6 T butter 
  • ½ c honey 
  • 1 c peanut butter 
  • 5 c rice crispy cereal 
  • 12 ozs chocolate melts

Line 2 baking sheets with wax paper and set aside.

Place the sugar, butter and honey to a simmer in a medium pan, over medium heat and stir until the sugar has dissolved and butter has melted.   Remove from heat, set aside a couple of minutes.

Place the peanut butter in a large bowl and stir in the heated mixture.   Stir in the cereal until coated and roll into balls.  Place on the prepared baking sheet and refrigerate for an hour.

Melt chocolate over a double boiler until all the chocolate has melted.  (I use the microwave, but you have to watch it, so not to overcook)

Remove the balls from the refrigerator and dip them one at a time, completely into the chocolate.   Remove with a toothpick and place them on the second prepared baking sheet.    

I store them in a tin in the freezer.
