Rolled Pinwheel Cookies


A nice treat to add to holiday cookie trays.  Similar toour grandmother's pinwheel cookies made at Christmas time.

  • 14 ozs butter, room temperature 
  • 1 c confectionary sugar 
  • 2 eggs 
  • 2 t vanilla 
  • 2 T milk 
  • 5 c flour 
  • ½  t baking powder 
  • 2 T cornstarch 
  • ½ t salt 
  • 2 oz dark chocolate, melted 
  • 2 T cocoa powder

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Place the butter and powdered sugar in a large bowl and beat.  Add egg, vanilla and milk and beat until combined.  Add flour, baking powder, cornstarch and salt and mix.  If the dough sticky, add some more flour. 

Divide the dough in two equal parts.  Add the melted chocolate and cocoa to one part.   Roll both parts into small, marble-size balls.

Take 3 balls of each color and arrange them alternately to make one ball.  Roll the ball between your palms.  Slightly press the ball to flatten and place on prepared baking sheet.   Bake for about ten minutes, until they begin to turn slightly golden.
