Homemade Almond and Coconut Cream Chocolates

 

A perfect treat to add to holiday celebrations, almond joys are simple and impressive. 

  • 1/3 c boiling water  
  • 4 T butter, melted
  • ¾  c sugar
  • ¼ t salt
  • 1 c coconut milk powder
  • 2 ½ c shredded coconut, unsweetened
  • 1 c whole almonds, toasted
  • 2 c bittersweet chocolate melted 

Line two baking sheets with wax paper and set aside.

Place the water, butter, sugar, salt, and coconut milk powder in a large bowl and mix until thick and smooth.  Stir in the coconut.

Take a tablespoon of coconut mixture and shape into mounds on prepared baking sheets and place two almonds on each mound.

Freeze the candies for 30 to 60 minutes, until they're firm enough to work with.  Then coat each mound with the melted chocolate and place them back on the baking sheets. Cool until the chocolate is firm.
