Spinach and Cheese Tarts

These tarts are quick, easy and delicious.  Perfect for holiday parties. 

  • your favorite pie dough recipe
  • 2 T butter
  • 3T scallions, sliced - white and light green parts
  • 1/3 c mushrooms, diced
  • 1 ½ c half and half
  • 3 large eggs, beaten
  • 1/3 c gruyere cheese, shredded
  • 9 ozs. frozen spinach, chopped, thawed and drained
  • salt and pepper to taste

Preheat the oven to 375 degrees.

Grease mini muffin tins and set aside.

Roll out pie crust on a lightly floured board.   Cut circles with a round cookie cutter or a glass and press the dough into each of the muffin cups and set aside.

Place the butter, scallions and mushrooms in a large pan over medium heat and cook for five minutes. Remove from heat.

Place the eggs, half and half, cheese, and salt and pepper in a bowl and whisk together.   Stir in the mushroom mixture and the spinach.   Spoon into the prepared muffin pan three quarters of the way full.

Bake for half an hour and cool on a wire rack.  If they stick to the tin, run a knife around the edges.
