Tortellini Chicken Alfredo

Tortellini chicken alfredo is a quick and easy dinner for a busy night.

  • 19 ozs cheese tortellini , uncooked
  • 3 cups homemade alfredo sauce
  • ½ c chicken broth
  • 1t fresh thyme
  • 2 c chicken, cooked and diced
  • 2 c mixed vegetables
  • Fresh parsley, chopped 

Preheat oven to 425 degrees.

Grease a 9 x 13-inch baking dish and set aside.

Place the tortellini, alfredo sauce, chicken broth and thyme in a bowl.  Mix together and put in prepared baking dish.  Cover tightly with foil and bake for thirty minutes.   Remove dish from oven, stir.  Stir in the chicken and the mixed vegetables.   Sprinkle with fresh parsley.

Return dish to the oven, uncovered, for ten minutes and serve.
