Bacon, Mozzarella Chicken

This dish is loaded with flavor, chicken, bacon and cheese - yum!   

  • 4 T olive oil
  • 4 boneless, skinless chicken breasts, cut in half
  • Salt and pepper to taste
  • garlic powder
  • onion powder
  • 1 1/2 c mozzarella cheese, shredded
  • 5 slices bacon, cooked and chopped
  • Fresh parsley, chopped

Place the olive oil and chicken in a medium skillet over medium high heat and sprinkle with salt and pepper.  Cook for six minutes per side.

Reduce to medium heat and sprinkle with garlic and onion powder.   Sprinkle with mozzarella cheese, then cover and cook until cheese is melted - about three minutes.

Removed the cover and sprinkle with bacon and parsley.
